Healthy Asian-Inspired Ground Beef & Veggie Stir-Fry (Easy Weeknight Dinner!)
Looking for a quick, nutritious meal that’s full of flavor and easy to customize? This healthy ground beef stir-fry is my go-to! It’s a clean and simple spin on beef and broccoli — but with ground beef (budget-friendly and fast!) and whatever veggies you have on hand. Think of it as the perfect “clean out the fridge” dinner that still feels like better-than-takeout.
It comes together in under 30 minutes, is naturally gluten-free (just use tamari or coconut aminos), and is packed with protein and fiber. You can serve it over rice, quinoa, or cauliflower rice depending on your vibe that night.
Ingredients
For the stir-fry:
- 1 lb ground beef (grass-fed if possible)
- 1–2 tbsp avocado oil (or olive oil)
- 2–3 cups chopped vegetables of choice (broccoli, carrots, bell pepper, zucchini, etc.)
- 3–4 cloves garlic, minced
- Cilantro for garnish (optional)
- 2 green onions, chopped for garnish (optional)
- Sesame seeds for garnish (optional)
For the sauce:
- 1/4 cup coconut aminos
- 1/4 cup organic coconut sugar
- 2 tsp toasted sesame oil
- 1 inch fresh ginger, grated (or 1 tsp ground ginger)
- 1/2 tsp crushed red pepper flakes (optional for heat)
- Salt and pepper to taste
Instructions
- Make the sauce:
In a small bowl or jar, whisk together coconut aminos, coconut sugar, sesame oil, and red pepper flakes. Set aside. - Cook the vegetables:
Heat 1 tbsp of oil in a large skillet over medium heat. Add your chopped vegetables and sauté for 5–7 minutes, or until just tender but still bright and crisp. Remove from the pan and set aside. - Cook the ground beef:
In the same skillet, add a bit more oil if needed and cook the ground beef over medium heat, breaking it up with a spatula. Cook until browned and fully cooked through. - Add aromatics:
Stir in the minced garlic and sauté for 1–2 minutes, until fragrant. - Combine everything:
Return the cooked vegetables to the skillet with the beef. Pour the sauce over the mixture and toss everything to coat. Cook for another 2–3 minutes to heat through and allow the sauce to absorb. - Serve:
Serve warm over your choice of rice, quinoa, or cauliflower rice. Garnish with cilantro, sesame seeds and green onion if desired.
Serve It with Broth-Cooked Rice or Quinoa
